Clam meat manufacturers

When evaluating clam meat, the primary indicators are sand content, glazing percentage, and freshness. Ensure the sand content is less than 0.1% through professional de-sanding processes. The glazing (ice coating) should be clearly specified (e.g., 10%, 20%) to calculate the net weight accurately. Freshness is determined by a natural briny smell and a firm, elastic texture; avoid products with a strong ammonia odor or slimy surface.

To ensure consumer safety and legal entry into most markets, suppliers must possess HACCP (Hazard Analysis and Critical Control Points) and ISO 22000 certifications. For the EU market, the processing plant must be EU-approved with a valid registration number. For the US market, FDA registration is required. Additionally, BRC (British Retail Consortium) certification is a high-standard benchmark for global retailers.

Prioritize suppliers using IQF (Individually Quick Frozen) technology, which prevents the meat from clumping and preserves the cellular structure and nutritional value. The blanching time and temperature must be strictly controlled to prevent the meat from becoming rubbery. For long-term storage, ensure the product is maintained at a constant temperature of -18°C or lower throughout the cold chain.

Request a Certificate of Origin and a Health Certificate issued by the local government authorities. Common commercial species include Short Necked Clam (Ruditapes philippinarum) and Yellow Clam. Ensure the Latin name is clearly stated on all documentation and packaging to avoid customs clearance issues related to mislabeling.

The most significant risks include cold chain breakage during transit and weight fraud (excessive glazing). To mitigate these, use temperature data loggers in every container and stipulate third-party inspections (like SGS or BV) at the loading port to verify the drained weight versus the gross weight.

For new suppliers, use Letter of Credit (L/C) or Trade Assurance services to protect your funds. For shipping, CFR (Cost and Freight) or CIF (Cost, Insurance, and Freight) are common, but ensure the shipping line provides at least 14 days of free demurrage at the destination port to allow for potential customs delays in food inspections.

Clam meat must be shipped in Reefer Containers set to -18°C or colder with the ventilation closed. Documentation must include a Packing List, Commercial Invoice, Bill of Lading, Health Certificate, and Catch Certificate (to prove legal, unreported, and unregulated fishing compliance). Always check the latest import tariffs and anti-dumping duties for seafood in your specific country.
